[edit] Software I use or recommend

Canon's Digital Photo Professional (DPP)

Canon's own RAW converter. Gives me good results, and now has plenty of options (highlighting shadows, lens corrections ...)

Gimp

It doesn't, yet, have 16bit per pixel support and I believe it shows after extensive changes, but I think it's the best free alternative to 'toshop.

Inkscape

Amazingly powerful vector drawing program

Hugin and Enblend

I don't know if any commercial soft gets better than this free equivalent for stitching panoramas (or large pictures). Now fully automated, though there's still room for improvement.

Enfuse (and ImageFuser on Mac OS X)

Now enfuse comes with Hugin, but I often have this step done manually for finer tuning of HDR tone mapping.

ImageMagick

Gives me better results than Gimp for sampling pictures, and easier to include in UNIX shell scripts :).

I try to use as many free software as possible, but keep running a Mac for Canon's DPP (raw conversion, lens correction).
