Description

Another traditional Maltese delicacy is the Honey cake. There are other products which use honey as part of the ingredients, one of these is the honey ring or as known in Maltese ‘qaghaq tal-ghasel’.

Honey Cake (Yield 12-inch cake)

Ingredients
  • 500 g Honey
  • 200 g Eggs
  • 200 g Icing Sugar
  • 800 g Soft Flour
  • 30 g Bicarbonate of Soda
  • 24 g Cinnamon Powder
  • 16 g Ground Cloves
  • 8 g Ground Nutmeg
  • 300 ml Milk
  • 400 g Flaked Almonds
  • 200 g Chocolate
Method
  1. Whisk icing sugar and eggs to form a sponge-like butter.
  2. Add dissolved Honey.
  3. Fold in the flour, bicarbonate of soda and spices.
  4. Finally add the milk and almonds.
  5. Place mix in a cake tin.
  6. Bake at 175°C for approximately 40 minutes.
  7. When cool, coat with chocolate.
