OCTOPUS, shiso, papaya, toasted soy

This dish was the first one presented to us with specific directions -- we were instructed to hold the round earthenware bowl in our hands and eat the octopus salad off the fork, and then sip the toasted soy milk, all without putting the bowl (which was inherently unstable) on the table.

Sue Wen: The octopus salad (with shiitake mushrooms and oysters) didn't make much of an impression on me, other than being sort of chewy, salty, and tangy, but the soy milk was fantastic -- warm, and infused with mint, which is much nicer than you'd expect, mild and earthy-flavored. (And I *hate* soy milk.)

Kevin: Soy milk was better than it sounded.

Elisa: Tasty, mildly savory, fresh, earthy.

Matt: Warm and pleasant.


BREAD: Next, we got small round fennel rolls, and plates of unsalted goat's milk butter (which didn't have much flavor to me, and had the consistency of runny lotion) and cow's milk butter made in-house and salted with black lava salt (which I liked much better).
