Description
English: Jolpan or the mini-meal of Assam. Jolpan consists of flattened rice (chira), puffed rice ( muri) proportionately mixed with yogurt, jaggery, and ground rice (xandoh). It is the desire of every Assamese. Although the cuisine may contain various other items like Bora Saul, Akhoi mixed with Pithas, the above-mentioned items are the basic ones. Assamese cuisine is incomplete without the Jolpan. Served mainly during Bihu, Jolpan is also taken as a regular meal by most households. Platted on bell metal cutlery, Jolpan is one of the most delicious dishes that a sweet tooth will ever have!
