Español: “PAN HIÑIDO” - Panadería Marbán

En Carbajales, y también en las tierras de Alba y Aliste, al pan candeal lo conocemos como pan hiñido; “hiñir” es una variante de “heñir”, que –según la RAE- significa “Sobar con los puños la masa, especialmente la del pan”. Hiñido, por tanto, significa "amasado".

El pan candeal, también conocido por pan blanco o pan bregao es un tipo de pan tradicional de nuestra Tierra de Campos, que se elaboraba con harina de trigo candeal. Se caracteriza por su miga densa y prieta y una corteza fina -pero crujiente-, de superficie lisa y color dorado que se presenta con cortes en diferentes formas geométricas.

El trigo candeal forma una harina con menos fuerza que la convencional y esto, unido a su baja hidratación -falta de agua en la masa- hace que requiera un mayor trabajo mecánico; primero se trabaja la masa y después se aplica el proceso de refinado, que consiste en estirar la masa varias veces con ayuda de un rodillo o máquina. De esta forma la masa se estira y se prensa al mismo tiempo y se consigue la textura que tanto caracteriza la miga de este pan, prieta y sin apenas alveolos.
