I would like to know, what type of wood was used to build this particular cabin.

The New York Times [1] says oak, and I more or less trust them. Please see the article on Wikipedia C. A. Nothnagle Log House for other possible sources. The National Register of Historic Places has a "nomination form" or "official information", but they do a lousy job distributing this info for New Jersey.
