English: Daing, tuyô, or bilad, meaning "sun-dried" or "sun-baked," refers to dried fish originating from the Philippines. The typical preparation involves splitting the fish open (although it may remain whole), removing the guts, generously salting it, and subsequently allowing it to undergo sun and air drying. Additionally, there are "boneless" variants that involve filleting the fish prior to the drying stage. Originally conceived as a preservation method, the abundant use of salt serves to impede bacterial growth, enabling the fish to be stored over extended durations.
