ARCHER. STEWED BRAINS. Wash the brains in cold water (removing all skins) andcover with water and boil for half an hour (do not pour offthe water in which the brains are boiled). Add a sliced onionchopped fine; salt, pepper and a tablespoonful of butter; letcook for twenty minutes, then thicken with flour; cook forseven minutes longer. COOK BOOK 41 spoonful of black pepper, one-quarter teaspoonful of red pep-per; mix all together in loaf, put in pan with spoonful of hotlard, sprinkle with flour; pour over the loaf one-half can oftomatoes, and bake. Serve hot or cold with sliced greenpeppers. MRS. WALTER CLARK. FRIED STEAK. Cut the edges of the steak in several places so that it willnot curl up. Slowly heat a heavy iron frying pan thoroughly,previously adding enough grease to keep the steak from cling-ing to the pan; turn after the one side is thoroughly browned.Season with salt and pepper when placed on a hot servingdish.
