Zach's Restaurant, 445 North Seventh Street (North 7th at Liberty), originally was opened as the "United States Hotel" sometime in the 1890s. The facility was primarily a local saloon owned by the Daeufer-Lieberman Brewery which offered a few rooms for rent on the second floor.

John F. Zach had entered the hotel and restaurant business in September 1912, after immigrating to the United States from Austria with his wife, Mary. He operated the Allenworth Hotel at 2nd and Union Street. In 1919, due to Prohibition and the Volstead Act the United States Hotel ended alcohol sales and was sold to Zach. He changed the name to Zach's Restaurant and converted the former bar and hotel into a restaurant, opening in June 1921.

During the 1920s, Zach's served the legal 0.1 percent alcohol beer however it was the food in the restaurant that was preferred. During the 1920s and 130s the restaurant was remodeled several times and it catered to a large number of people. It was a favorite eating place for many people. Mrs Zach ran the kitchen and also produced a wide variety of deserts.

In September 1945, John Zach retired and placed the property for sale. It was purchased by the Gehringer and Harlacher auto parts business who renovated the property and ran their business successfully until 1973 when it closed due to the retirement of the principal owners. Today the building houses the Firebird Theater, a local stage theater.

The Zach's went back into the restaurant business in 1950, opening "Zach's Cafe" at 28 South Sixth Street. It was primarily operated by Mary Zach and her son Otto Zach. With the death of John F Zach, her husband in 1955, the business was sold in June 1956, although the name continued with the new owners. In 1958, the cafe was sold and renamed the "Bell Cafe", and the name Zach's faded into history. The business closed in 1971. Otto Zach, who had been associated with the businesses since 1930, passed in November, 2000.
