Halawet el Jibn (spelling varies)

Summary

[edit]
Description
English: The yellow rolls on a big server are halawat al-jibn. Raw cheese is soaked, so the salt content decreases, then it is melted, stirred, stretched resulting in a cheese-based dough. That is rolled, cut and filled with kashta, a creamy dessert filling, and rolled into a cylinder. That may be cut in pieces and if things are not sweet enough topped with pistachios and drenched in honey One of pictures of food, ingredients, people preparing the food. I tried to indicate what is what, in some cases I simply do not know. Some will be local specialties, others common.
