TIME 11:04 GUAVA, avocado, brie, key lime juice Juice from the key lime centerpieces were finally put to use in this dish. There were many pieces to this dessert -- a small block of half avocado, half brie semifreddo, a spoon with caramelized brie and pine nut powder, and a guava sponge topped with a chunk of basil ice, drizzled with the aforementioned key lime juice. All of these were in the "bowl" section of the dish, which then had guava soda poured into it, and above these, in a flatter section of the dish, was an exploding rum ball, on a pile of nut powders. Sue Wen: I didn't really taste the key lime juice at all, but the guava soda was very pleasant -- not too sweet, and the carbonation worked nicely with the other elements. The semifreddo was amazing -- smooth and creamy and sweet and very well paired with the soda. The other elements were all good, but the semifreddo was definitely the star of the show. Kevin: Very nice. Elisa: Totally amazed. Matt: Wow, this many things going on in a not-very-sweet dessert could go badly, but this is really excellent. |
