Italiano: Tra le analisi microbiologiche degli alimenti vi è la Conta Microbica Totale (CMT) effettuata contando letteralmente le colonie batteriche cresciute su Plate Count Agar (PCA), un terreno di coltura non selettivo. L'alimento viene pesato e prearricchito con un brodo di coltura che rivitalizza i batteri presenti all'interno del campione. Una parte di questa soluzione viene seminata per inclusione all'interno di una piastra Petri, ricoperta di terreno PCA e successivamente conservata a 30°C per 3 giorni per permettere ai batteri presenti di crescere.
English: Microbiological analysis of food includes the enumeration and detection of aerobic mesophilic bacteria grown on Plate Count Agar (PCA), a non-selective culture medium. The food is weighed and pre-enriched with a culture broth that revitalizes the bacteria within the sample. A portion of this solution is plated by inclusion inside a Petri dish, covered with PCA medium and then stored at 30°C for 3 days to allow the bacteria present to grow. |
