הכרכום נזכר בתנ"ך כצמח בושם. מופיע במשנה ובתלמוד כצמח תבלין ורפואה. הכרכום שימש להפקת חומר צבע למזון, אריגים ולצביעת גוף האישה. המלה כרכום הפכה סמל לצבע צהוב. הביטוי נתכרכמו פניו משמעותו שפניו צהובות ומביעות כעס. הכרכום הוא צמח מוגן שאסור לקטוף אותו. ערביי ישראל מוציאים את הפקעות הקטנות של הכרכום החורפי מהאדמה וקולים אותן ברמץ של מדורה. הפקעות נאכלות צלויות באש או מבושלות. התבלין המופק מצלקות פרחים של סוג אחר של כרכום נקרא בשם זעפרן.
