Description
English: Tuyô (Filipino/Tagalog) n is a small, salted and sun-dried fish in the Philippines. Tuyô refers also to a name of dish , usually fried, using Tunsoy (Sardinella fimbriata) and Tabagak (Sardinella albella). Both are oily small schooling fish in the herring family Clupeidae . It is one of the most consumed staple food for a large part of the country's population, especially in the poor region. Tuyô should not be mistaken with daing (or pinakas in W. Visayas). Daing requires lesser salt, some with vinegar, less drying time and different type of fish. Tuyô rather uses more salt and is totally dried.
