Description
Deutsch: Zwetschgenbames ist eine Spezialität der Fränkischen Schweiz im Raum Bamberg. Es wird aus der mageren Rinderkeule trocken gesalzen hergestellt und entfaltet nach einer Reifezeit von mindestens 3 Monaten sein volles Aroma. Danach räuchert man es über Zwetschgenspänen bei niedrigen Temperaturen ein bis zwei Wochen. Zur Brotzeit wird es fein aufgeschnitten, mit Butter, Brot und Gurke serviert. Fotografiert im Gasthaus Schiller in Wernsdorf.
English: Zwetschgenbames is a speciality of the Franconian Switzerland in the Bamberg area. It is produced dry-salted from the lean leg of beef and develops its full aroma after a maturing period of at least 3 months.
