Kavurma (Turkish) is a way to preserve meat and is also the name of this meat product which is used as a food item or ingredient in cooking. It is also used for stir-fried meat dishes, such as the "kurban kavurması" (shortly "kavurma") - a dish eaten traditionally in the first day of Kurban Bayramı (Turkish for Eid al Adha), and made with the meat of the sacrified animal (generally sheep or cattle).
