  • Photograph of a worker next to an olive mill, California, ca.1900.
  • The man is standing next to a mill used to crush the olives.
  • The mill consists of two large rollers attached to a cam in the center where a system of sprockets, belts and wheels make the rollers move around within a contained circular path. ::*At right is a contraption that appears to serve as a filter. At the bottom of the contraption is an outlet that allows the olive oil to flow into another container or on to the next machine in this processing plant.
