()nthe Atlantic coast, New York and New Orleans are themain centres of consumption. Cambarus affims, takenfrom the Potomac River, is the crayfish found in the springin the New York markets. Later in the season thismarket is supplied by C. virilis and immunis, which areshipped from Montreal, Milwaukee, and other Westerncities. Edible Crabs.--Of the crabs which reach our market the most important is the blue crab.
