It's Russula chloroides season here. This species is distinguished from the similar R. delica primarily by the beautiful neon blue band on the stem, however, to my knowledge the difference is not supported by molecular studies. This big fleshy Russula is called "cyхой груздь" here. "Груздь" (pronounced "groozt") is a collective name for a number of commonly collected larger acrid Lactarius species, such as L. resimus and L. turpis, and "cyхой" ("sukhoi") means "dry", referring to the lack of latex - because while it may look like a Lactarius it's still a Russula! It often grows under thick litter and some people use sticks and rakes to look for younger fruitbodies, destroying the forest floor (when you see spots where such collectors have "worked" you have to subdue violent urges). Like so many other things in Russia, it's usually pickled (in modern healthy food freak slang this is usually referred to as "natural vinegar-free lactic acid fermenting"). Fruitbodies are thoroughly washed from litter stuck to the surface (loose hyphae on the surface trap small debris) and soaked in water for a few days (depending on the greediness of the collectors, sometimes the bathtub is used for this purpose), rinsed, drained, rubbed with salt, stacked into buckets and left to ferment under pressure for a while. Sometimes the hot pickling method is used too with this species, even though it's less orthodox. |
