English: Giorgos Hatziparaskos from Rethymno on the island of Crete is the last craftsman who produces handmade phyllo.
Established in 1948, Yiorgos Hatziparaskos is one of the last traditional filo masters in all of Greece. Assisted by his wife, Katerina, and son, Paraskevas, today he still makes superfine pastry -- some of the best baklava and kataïfi (‘angel hair’ pastry) -- by hand in his workshop. The highlight is when they whirl the dough into a giant bubble before stretching it over a huge table.
