Description
English: Sow thistle (Sonchus oleraceus) The sow thistle is a common roadside plant native to Eurasia and tropical Africa and can be found growing almost worldwide. The name is derived from the plants having been fed to lactating sows, in the belief that milk production would increase. Sow thistles have also been used as fodder for rabbits and they are edible to humans. Young leaves, described as having a mild flavour, can be added to salads, cooked like spinach or used in soups. The leaves contain about 30 to 40 mg of vitamin C per 100g. Stems can be cooked like asparagus or rhubarb and are best if the outer skin is removed. The milky sap was used as a chewing gum by the Maori of New Zealand.
